10. Lettuce Wraps (and other non-carb sandwiches)
Our friend Shauna, also our guest on show #148 – Spring Into Action: Simple Routines & Practical Tips From An Amazing Mom, eats very healthy. This summer she showed up to at least three swim meets with her dinner in a cooler – a big foil wrapped lettuce wrap! We’ve found two posts for lettuce wrap recipes.
The second is 29 Fresh and Crunchy Lettuce Wraps from Buzzfeed. The bacon radish lettuce wrap photo is making my mouth water!
9. Chelle’s Black Bean Chicken
Chicken and beans. You can’t go wrong, can you? Chelle makes this simple recipe and shared it with me. I make it a lot and it ALWAYS turns out so delicious. Unfortunately I don’t have a picture, though.
Here is what I do: Take frozen chicken breasts (I never remember to take my meat out to thaw) and sprinkle with garlic powder and chili powder. Throw them in the crock pot. Dump a bunch of salsa on them. Dump 2 cans of black beans on them. Cook on low all day. I serve over rice and have cheese as an optional topping.
So simple! My entire family LOVES it.
Here’s the official recipe:
6-8 Chicken breasts, 1/2 T garlic powder, 1/2 T Chili powder, 1 cup salsa, 1 can black beans. Cover with foil. Bake in oven for 45 minutes at 350 degrees. Uncover. Add taco cheese and cook 15 minutes. Top with sour cream and serve over rice.
8. A Big Salad
A Big Salad is not necessarily a recipe but this post includes pictures of the many salad’s we’ve made and a long list of our favorite ingredients. Here is the salad that Tracy has been eating. It includes her favorite simple dressing, too.

When I eat Kale I envision all it’s densley-packed nutrients entering my blood stream. I can practically feel it…. Okay, I’m regaining control.
