Last week I was looking for something light and fresh to prepare for company. Thankfully my family likes and eats most every food and we don’t have any allergies.
I like to eat healthy but preparing and chopping veggies takes a lot of time! Since I hadn’t cooked in a hwile it was a little theraputic. The house was clean and most of the family went next door for a quick swim before dinner.
There is something about a completely silent, peaceful kitchen. I started chopping.
I mixed the veggies and chicken.
Then made the dressing.
I chopped peanuts for the topping. These were served on the side since my dad can’t eat nuts and seeds right now.
I mixed the sesame seeds with the peanuts.here. This was perfect after the heavy lunch we had earlier in the day.
