Our all time favorite, healthy, clean-eating snack is this protein “Power” bar. Easy to make. Satisfies all cravings. Very filling when you drink a glass of water while eating it. Delicious. Vegan. Gluten free. Whole food. Yum, yum, yummy.
Here are my (Tracy) modifications to the recipe below…
You are to place almonds, chia seeds, shredded coconut, almond butter, chocolate, and salt in a food processor.
I do not own a food processor (sad face) so I use my coffee bean grinder to chop the almonds.
I put the almonds in a mixing bowl. Then, I add the chia seeds to the bowl. Today I had to run to the grocery store to get these because I didn’t have enough.
I add the coconut to the bowl. I use unsweetened but look at the note in the recipe below if you don’t have any. Our grocery store now carries unsweetened coconut! I used to have to go to a health food store to find it.

Oh, back to the recipe…
Add your almond butter.
I just use a pastry blender to mix it up. I did add salt but did not add the chocolate yet.
Then in a small sauce pan, melt coconut oil over low heat. When melted remove it from the heat and add the honey and vanilla into oil. It doesn’t really mix well but that is okay.
Cool a little and pour it over the other ingredients. I used my pastry blender to mix it all together.
I like to have little bursts of chocolate chunks when I eat my bar. I don’t want all the chocolate melted into the other ingredients. So when it has cooled off a bit I add in my chocolate. This is what chocolate I used today. I chop it roughly on a cutting board with my big knife.
Stir one last time just to mix chocolate in and place batter in an 8×8 pan.
Chill in the refrigerator for 1 hour, until mixture hardens
Remove pan from the refrigerator and cut into bars. Remember this makes 20 servings! So make 20 bars with your cuts!
TBH, I usually cheat and make 16.
You might be tempted to eat more than one bar a day but don’t do it. Drink your bar with a large glass of water and savour every morsel!! By the time I finish I am very satisfied.
Sometimes I will put my serving in a tiny little Tupperware dish and take with me if I am out working. By the afternoon it has softened and while I drive home I scoop it out with my finger and eat it that way! Oooohhhh, so delicious!
I store them in a container layering the bars in between waxed paper. Enjoy!
NOTE: After you eat them you definitely need to use one of these.
