You probably know by now that Chelle and I are eating healthy. Read about my “Get Healthy” journey here.
Or, at least trying to eat healthy most of the time.
But, it is HAAARRRD!
I follow some blogs that focus on clean eating but I never hear them share how they binged on chocolate or ate 5 cookies or came home after work and just didn’t care anymore and ate a bag of cheetos! They make it look so easy!
I do really good in the morning and for lunch. Then, there is no telling what might happen! The other day I got home and saw the No-Bake cookies that my son had made. They were the BEST No-Bake cookies I had ever tasted. EVER. I ate one. Then I ate another. After that my craving was gone. Probably because I picked the two biggest ones! YUM. They are gone or I would eat one right now.
No point dwelling on the bad. Let me focus on the good!
Breakfast: The most important meal of the day.
One of the things I like about working out early in the morning (I try to workout 2-4 mornings a week but this is another area that is always a struggle for me) is that I feel like eating a healthier breakfast. I’m hungry and I want to make good choices to refuel my body.
If I don’t get vegetables in at breakfast it doesn’t seem possible to get 7-8 servings per day. Whenever possible I like to add vegetables to my breakfast, either through a smoothie or with eggs.
Here is a really healthy breakfast with a lot of vegetables. This was my breakfast this morning after a hard, heavy Body Pump class.
1. Heat oil in pan over medium-high heat. Add chopped vegetables. Saute until tender.
2. Add the eggs.
3. Salt and pepper to taste.
4. Flip and stir if you want scrambled eggs.
5. Serve with a few avocado slices or a small side of fruit and a big glass of water!
