Chelle and Tracy talk about the changes they have made with their food choices on their show – #127 – Healthy Eating – Tracy and Chelle Are Taking Credit for the “BIG SALAD.”
I (Tracy) have made a lot of salads on my “Get Healthy” Journey! Above are just a few of the pictures. DELICIOUS. Fresh. Healthy. Lots of chopping.
And, yes, Chelle mentioned in our show notes that we are taking credit for the big salad-for-lunch lifestyle change of ours! 🙂 Watch the video if you are not familiar with The Big Salad reference.
Here are some of the ingredients we’ve added to our salads:
- Collard greens
- Swiss Chard
- Purple (red?) cabbage
- Broccoli Slaw
- Snap peas
- Frozen peas
- Olives (Tracy’s favorites – Kalamata and Lindsay brand green) (Chelle hates olives)
- Feta or Blue Cheese
- Nuts (walnuts, sliced almonds, pine nuts)
- Artichoke hearts
- Red Onion
- Seasoned with salt, pepper or Mrs. Dash
- Dressing: Hendrickson’s Sweet Vinegar & Olive Oil (1-2 tsp) (Chelle mixes it with Dorothy Lynch’s French Dressing)
Chelle’s ONE thing: Buy some salad ingredients and eat a salad for lunch! Simple!
